VEGAN "PHO"

Yesterday I was feeling a bit risky in the kitchen, so I decided to tackle one of my cooking fears and try my hand at a traditional Vietnamese dish. "Pho", is a rice noodle based soup normally containing beef ingredients, but can easily be transitioned into a "Vegan friendly" version; luckily, I discovered the perfect recipe in one of my own personal cookbooks to try my hand at.
Needless to say, I was quite proud of the ending result, and shamelessly  ate BOTH servings on my own; I believe this will be a new Sutton household favorite for meal time!

Here is the recipe below!
Broth
1 large onion, peeled and halved
2-inch piece fresh ginger root, peeled and halved lengthwise
3-inch cinnamon stick (preferably Vietnamese cassia-cinnamon)
1 star anise 
2 cloves
1 teaspoon coriander seeds
4 cups unsalted vegetable stock
2 teaspoons soy sauce
4 carrots, peeled and coarsely choppedNoodles1/2 pound dried brown rice noodlesToppings (optional)
Protein such as fried or baked tofu, or seitanGarnishes
2 scallions, thinly sliced
1 chile pepper (Thai bird, serrano, or jalapeƱo), sliced
1 lime, cut into wedges
1/2 cup bean sprouts
Large handful of herbs: cilantro, Thai basil, culantro/saw-leaf herb
Hoisin sauce
For the broth
Char onion and ginger over an open flame (holding with tongs) or directly under a broiler until slightly blackened, about 5 minutes on each side. Rinse with water. In a large pot, dry roast cinnamon, star anise, cloves, and coriander over medium-low heat, stirring to prevent burning. When spices are aromatic, add vegetable stock, soy sauce, carrots, and charred onion and ginger.

Bring broth to a boil, reduce heat, and simmer, covered, for 30 minutes. Strain and keep hot until ready to serve.
For the noodles
While broth is simmering, place noodles in a large bowl and cover with hot water. Let stand for 20-30 minutes or until tender but still chewy. Drain. (If soaking does not soften the noodles enough, blanch them in a pot of boiling water for a few seconds.)

For the toppings (optional)
While broth is simmering, prepare toppings as desired – slice and cook tofu, lightly steam or blanch vegetables, etc. Toppings should be unseasoned or only lightly seasoned so as not to interfere with the flavor of the broth.

To serve
Divide noodles between two bowls. Arrange toppings over noodles. Ladle about 2 cups of broth into each bowl. Serve with garnishes on the side, which diners should add to taste.

SUSHI SASHAY

Between coffee and sushi, I'm not quite sure what my bigger addiction is, and not only am I addicted but it seems that I've rubbed off on Chris as well. Since we've been married, sushi has been our number one splurge when it comes to date-night's out; admittedly we look for any excuse for a sushi date these days.Not only is it pleasing to the palette, but we've made it a tradition to find the best sushi spot in each new city we visit; and with TWO trips coming up we have already began the research! So far St. Louis has landed the top spot for overall "SUSHI SATISFACTION", but with trips to Chicago and Dallas approaching soon that top spot is subject for change.We hope to see our list of cities grow tremendously throughout the years, and even though I have an overwhelming love for food, I have an even bigger love for our little "couple traditions".We love to pretend we're top notch food critics, and whether we truly are or not, It's just part of our own special bond. It's something we have a lot of fun doing, and though we're not looking for any type of  recognition for our reviews, there's NEVER a dull moment when spent with the Hubby. Most importantly, It's all about the MEMORIES!

WHATS FOR DINNER?

In my opinion, it's one of the best feelings in the world to make a completely homemade meal, that's not only healthy but also delicious. Last night, Chris and I decided to have a relaxing night at home to escape the outside chill, so a warm bowl of soup was just what we needed to hit the spot. I followed a lentil soup recipe , from a fellow blogger but made a few ingredient changes to make it COMPLETELY Vegan. This was my second time experimenting with this recipe and I found it wasn't as flavorful as I desired, so I added some extra spices, green curry paste, and garnished the top with fresh cilantro.
Since the soup takes about an hour to simmer, I made some fresh kale chips which were the perfect lightweight appetizer to hold me over; not to mention they're a breeze to make! Thankfully, Chris is always willing to try my Vegan treats, which makes a worlds difference come dinner time; and whether he wants to admit it at times, I think he actually enjoys eating healthy!

Happy Birthday, Madre!

 Yesterday, the Hubby, Seester and I joined in celebrating my beautiful mother's birthday, by spending the afternoon in Northside. With a scrumptious lunch at "Melt", followed by a viewing of "Like Crazy"at "The Esquire"; a combination that doesn't get any better! As far as I could tell, my Mum really enjoyed her special day out with her kiddos, but of course it wasn't complete without the father and big brother! But all in all, the day was lovely,and my mum deserves any bit of love and recognition because she is one amazing gal!

Northside & Rouge



Now that the Seester is living downtown, it's no longer just a two minute drive down the street to hang out; not to mention the amount of gas my vehicle guzzles round trip. Luckily, we were able to find a bit of time to spend together, so we met up in Northside for lunch and a quick stroll through town. She kindly treated me to a yummy vegan meal including dessert, and brought along some lovely company!

It was an active afternoon in Northside which made for some productive "people-watching" and created some interesting sights and sounds. We had fun discovering some street graffiti including the infamous "Shepherd Fairy", whom has seemed to make his mark heavily throughout the Cincinnati area.
My sister has such a wacky personality, so it makes sense that she has a friend like Johnny! They make one fantastic duo, and I don't think I stopped laughing the entire afternoon. It was a splendid day!

Girls Night In:Skulls and Snickerdoodles

I've never been a huge Halloween fanatic, but any excuse to make tasty treats and hang out with some close friends is enough reason to celebrate! I invited a few of my girlfriends over Friday night, to stuff our faces with spooky snickerdoodle cupcakes, and to watch the hilarious comedy, "Bridesmaids". It was a lovely change of pace, from the usual coffee shop hang out, and it gave me the chance to try out an awesome new cupcake recipe!
With the big HALL-O-WEEN right around the corner, I've been indulging in more chocolate than I'm willing to admit, plus I've been blessed with a weekend full of time with the hubby! Tomorrows festivities include some first time trick-or-treating with my little buddy Brian,homemade candy making, time with my girl Alexis,and a showing of "Rosemary's Baby"(also my favorite movie of ALL TIME!).

Hey there, Butter Cup!

It's been quite some time since I last did a recipe entry, so what better time of the year to do one candy related! Throughout my time browsing the internet, I came across this recipe for "(Vegan) chocolate peanut butter cups", and just HAD to try it out! It was so easy, and took less than ten minutes to make, plus it was the perfect treat to surprise Chris with after a long day at work.
Once they were completely finished, I placed the wrapped cups in simple "take-out" containers, and gave them to some close friends and family. The overall feedback was amazing, and I'm looking forward to making a giant batch for the holidays coming up!

This Weekend: Thus Far



So far this weekend has been quite the delight, spending quality time with the husband and close friends. Yesterday Chris and I met up with some lovely company at "Benihanas" to celebrate our friend Melissa's 22nd birthday! It's been a few years since I last had the chance to eat there, but I never lost the craving for their hibachi fried rice; plus I enjoyed introducing Chris to something he had never tried before.

          Although it was a bit over-crowded for my liking, we stuffed our faces with amazing food and surprised Melissa in the process! To further show our love, we headed back to Alexis's house to treat the birthday girl to homemade desserts, and gifts. I was so blessed Chris was home to tag along, and to spend all night with some incredible, and talented people. The night came to a close with Chris and Alexis showing off their musical talents with some beautiful duets, and a couple of acoustic covers of Johnny Cash. The entire night was simply beautiful, and I was extremely grateful we were able to make Melissa's day so special, because she is one awesome chick. SWOON*
